Schlotzky’s debuts new prototype design in Derby

As brick-and-mortar restaurants continue to evolve in a post-Covid world, a new prototype design for Schlotzsky’s debuted last week in Derby.

The restaurant opened Aug. 12 on Rock Road, to the south of Patriot Avenue.

With 87% of business already consumed off-premises, the fast-casual sandwich franchise says it has evolved its design to meet customer demand. So Schlotzsky’s introduced two new prototypes — a version with two drive-throughs, one on each side of the restaurant, and space for a curbside pick-up window, and the version in Derby that has a single drive-through and seating for just 35 guests.

Franchisee JJ Ramsey opened the first-of-its-kind location in Derby. He owns and operates 20 Schlotzsky’s franchises across Arkansas, Texas, Missouri and Kansas, including four others in Wichita.

“It’s exciting to be a key player in Schlotzsky’s growth and evolution and we’re all looking forward to debuting the new prototype with enhanced operational efficiency,” Ramsey said in a news release. “Meeting our guests’ wants and needs remains the No. 1 priority and is critical to survive in today’s competitive market. We’ve learned that off-premises access is important to our guests and the new prototypes will drive sales for that important revenue channel.”

Greenwich Retail Development LLC, owned by Landmark Commercial Estate founder and CEO Brad Saville, is the owner and developer of the project.

The modified design in Derby features a drive-through and designated area for a curbside pickup window. The restaurant totals 1,800 square feet, with a small indoor dining room as well as an outdoor patio.

The Texas-based franchise announced Monday that it’s on track to sign 100 new restaurant deals in 2021. Schlotzsky’s already has 329 restaurant locations in 24 states.

“Over the past few years, we’ve recognized the need to evolve our restaurant design and provide flexible options to franchisees to develop in competitive real estate markets and urban areas,” Schlotzsky’s chief brand officer Tory Bartlett said in a statement. “”Since we launched our new prototypes and placed an added emphasis on accessibility and convenience, we’ve seen an increase in signed deals and overall franchisee interest,”

The Derby location, which also serves breakfast and Cinnabon products, is open 7 a.m. to 10 p.m. daily, with the lobby closing at 8 p.m.
