Schlotszky’s plans new location in Derby- the sixth for the Wichita area

Although it has been a tough year for the restaurant industry due to COVID, Schlotzsky’s franchisee, JJ Ramsey, still has plans for growth.

He just finished remodeling his four other locations in Wichita and is about to start work on a new Schlotzsky’s in Derby.

The new Derby location will go up on a vacant piece of land between the Fidelity Bank and the new Dunkin’ Donuts on the east side of Rock Road, to the south of Patriot Avenue.

The Schlotzsky’s is targeted to open late spring or early summer in 2021.

Greenwich Retail Development LLC, owned by Landmark Commercial Real Estate Founder and CEO Brad Saville, is the owner and developer of the project. The LLC just recently closed on the property, and Troy Farha and Christian Ablah were also involved in the transaction.

Wichita’s SBA Construction will be the general contractor on the build.

Ramsey said he had been looking for property in Derby for several years, and “it just seems like a great market. Great growth there, and we just love the location. I think it will be great during lunch, and even for dinner I think it’s a great dinner and breakfast opportunity, as well. So, people on their way to work to Wichita and then at night”.

Even though some of the renovations were in the works pre-COVID, Ramsey said the fast-food industry as a whole is starting to rethink restaurant design and layout because of the virus.

The new Derby location will only be about 1,800 square feet.
